My Favorite Local Comfort Food

My idea of comfort food might be slightly different than others. This past month, a blog group I was in challenged me to write about my favorite comfort food. It’s a bit of a challenge for me because recipes aren’t exactly something I blog about, but I decided to go for it. The local food movement is growing. According to Business Insider, local food sales in the U.S. grew from $5 billion to $12 billion between 2008 and 2014, and it’s set to reach $20 billion by 2020.

Locally Grown Food Benefits

I won’t lie, I love a good home cooked meal of fried chicken and mashed potatoes, or spaghetti and garlic toast. But what brings me more comfort than anything is knowing where my food comes from. There are so many reasons to support local food. Over the past few months, I’ve made more of an effort to support my local farmers.

While I’m relaxing and eating my meal, I want to know the person who helped grow it was cared for.  Luckily, my mom does, too. Over the past few years, she has given me tons of tips and resources on how to buy locally grown and garden.

This past gardening season was a disaster. All I grew was garlic and kohlrabi. Luckily, we have a great farmers’ market in Stillwater. Part of this recipe was bought from the market and the other was from our Oklahoma Food Co-op.

My Local Comfort Food Ingredients Include:

  • 2 Zucchinis from the Stillwater Farmers’ Market
  • 3 gloves of garlic and 1 onion from my mom’s garden
  • 1/4 lb of bacon from Ressler Farms
  • 4 cups of cheddar cheese from Christian Cheese
  • 1 lb potatoes from my garden
  • 12 eggs from Lazy R Ranch
  • 1 tsp of dill from my mom’s garden
  • 1/2 cup of water
  • 1 1/2 tsp of Salt and 1/4 tsp Pepper

Step One of my favorite local recipe: shred potatoes and layer them in pan.

After gathering and prepping all my vegetables, which included chopping and cooking bacon, shredding the potatoes, zucchini, onions, garlic and cheese, I layered the bottom of my greased pan with shredded potatoes. Normally this would have taken forever, but my mom let me borrow her Ninja, which had the vegetables shredded in a matter of seconds. I think next time, instead of raw potatoes, I will cook them in a skillet with some butter to make more of a hash brown.

Then I cracked 12 eggs into a bowl, beat them and added water, salt and pepper.

Step Two of my favorite local recipe: mix 12 eggs, half a cup of water, 1 tsp of salt and pepper.

Then I added my shredded zucchini, onion and garlic into the mix. Once the bacon was done, I added it and a little bit of the bacon grease with the rest of the mixture. I also added the cheese then mixed it up.

Step Three of my favorite local recipe: mix shredded zucchini, onion, garlic, bacon and 2 cups of cheese.

Once everything was all mixed up, I poured the mixture on top of my potatoes. The oven was set 375 degrees for until the middle was set, which took about an hour.

Although, I chose to make this dish local, the best thing about it is that you can throw whatever you have into the egg mixtures, which can really help with food waste. Egg and Potato Casserole
My favorite thing about this egg and potato casserole is that it's super easy because you throw everything in one bowl. You can pretty much throw whatever vegetables you have in there, which saves food waste and it only takes a few dishes.

Instructions
  1. Get ingredients out and shred vegetables and cheese
    Comfort Food Recipe Supplies
  2. Grease 9x13 pan
  3. Shred potatoes and layer in bottom of pan
    Step One of my favorite local recipe: shred potatoes and layer them in pan.
  4. Chop and cook bacon
  5. Crack 12 eggs into a bowl, beat yolks together
  6. Add water, salt and pepper to bowl of eggs
    Step Two of my favorite local recipe: mix 12 eggs, half a cup of water, 1 tsp of salt and pepper.
  7. Add zucchini, onion and garlic into eggs
    Step Three of my favorite local recipe: mix shredded zucchini, onion, garlic, bacon and 2 cups of cheese.
  8. When bacon is finished cooking, add it to the eggs with a little grease.
  9. Add cheese and mix
  10. Pour mixture over potatoes
    Step Four of my favorite local recipe: add 2 more cups of cheese on top.
  11. Bake until set then Enjoy!

  1. This looks awesome!! Reminds me almost of a potato pancake casserole! I may have to make a vegetarian version- Which this would be super easy to adapt to!! Yum!

  2. I love comfort food that’s homemade – at least you know what goes into it and you can control the salt and sugar content. Best of all, you can buy ingredients from your local farmer.

  4. For a girl who says she doesn’t do recipes, this is pretty awesome! Don’t make this your last one. As a low carber, the only thing I might need to change up would be the potatoes, but I’m thinking that a lot of the deliciousness comes from them, and they don’t add a lot of carbs to the mix!

    1. Aww, thanks Marjie! You’ll definitely need to find a low-carb alternative. My other recommendation is sweet potatoes, but I’m not sure if those are low-enough in the carb department. Let me know if you have any suggestions and I’ll make note of it.

    1. No, I’m sorry, but like I said I don’t hardly make up recipes, usually just follow them, so I don’t have much experience with trying to come up with alternatives. But this recipe is super easy, convenient, and lends itself to many other easy alternatives, so I’m sure, it would be easy to make your own. Good luck and let me know if you find a good way to make it vegan. I’d be happy to add that information.
